Since I arrived home from my travels I’ve been trying to find every which way I can to fill up my seemingly limitless spare time. Sounds amazing eh?! Well yes, it’s amazing if you are employed…but really try giving unemployment a go and you will quickly find it is less than amusing. All that time you have on your hands? Yep, EVERYONE, and I mean literally everyone in the whole world is at work. You get the picture.
So, like I said, I’ve been cramming in lots of gym time, catching up on those TV series which I missed out on and generally making cups of tea to fill up my days. Well this week, I decided to go a step further and make some super yummy chocolate Bourbons from scratch to go with my tea! And you wouldn’t believe how easy it is! That’s right, even you beautiful people with jobs can squeeze this bit of baking into your busy schedules, so here’s the recipe below…Enjoy! Oh, and even you newby bakers will most likely have all of the ingredients in your cupboards, yay!
What will I need?!
This recipe makes about 18 Bourbons…enough even for Grandpa.
250g plain flour
125g chilled unsalted butter
125g caster sugar
2 tablespoons golden syrup
50g cocoa powder
1 teaspoon bicarbonate of soda
3 tablespoons milk
For the Filling….
75g softened unsalted butter
125g icing sugar
15g cocoa powder
But what do I do?!!?!
It’s soo easy! Preheat the oven to 180 celcius and throw all of the above into a food processor. Pulse the processor until everything clumps together nicely, then dump it onto the worktop and bring together.
Roll out the mixture onto greaseproof (baking) paper, keeping it rectangular. You’ll need to keep dusting your rolling pin with flour whilst doing this. Once you have your doughy rectangle at about 1 cm thickness split it into 3 long lengthways strips (keeping the strips together), and then slice these across into 1 inch wide rectangles (again, keep them together).
If you want to be fancy here you can poke 5 dots into each of the longest sides of your rectangles to make them authentically Bourbony. Pop these in the fridge to cool for 30 mins, before putting them in the oven for 20-25 mins. Use a knife to separate each rectangle and leave to cool completely.
While these are cooling, you need to work on the filling. Pop all of the filling ingredients into a bowl and mix together. Note: do not wear white! You need to cream the butter into the cocoa and icing sugar and it makes a hell of a mess. Keep mixing until you have a lovely thick icing and don’t add any extra water, we need this to stay thick!
Once you’ve mixed your filling, spread it onto the back of one biscuit and smush another onto it….voila! Beautiful homemade Bourbons!!
